Guilt free snackin

I needed a pick me up this afternoon. After a long day of cleaning the apartment I deserved a yummy snack. I had some nonfat Greek yogurt and mixed that with 2 tablespoons of hidden valley ranch season mix. Super yummy! Serve with your choice of veggies! Yummy!

Pulled Pork Nachos

Had some leftover pulled pork so I was inspired to make nachos! I went to happy hour with some of the attorneys from the office and they ordered nachos. They were yummy… but these were better. ;) Pulled Pork Nachos made with multigrain chips from Trader Joe's, slow roasted pulled pork, green chilies, a drizzle of non-fat Greek yogurt and BBQ sauce, and homemade chipotle black bean dip. Soooooo yummmmy!

Homemade meatball subs

Have I mentioned I am obsessed with grinding meat since I was gifted a Kitchenaid standing mixer with attachments? :) I was excited to make these meatballs for my boo. I know he needed a 'man sandwich' so I ground up some extra cuts of pork chops and sirloin to make these yummy balls. The results were super yummy! So here is my pork and beef meatball subs made with hoagie rolls, melted cheese, tomato sauce, and Italian parsley. Yums!
