Kiddie lunch

This meal brings me back to when days felt longer, times were simpler, and I was a young girl… good thing I'm still a young girl at heart! :) me and my boos lunch: Tyson brand chicken nuggets (buy one get one free at Fresh and Easy!) dipped in sriracha ketchup, raw kale, and fresh watermelon juice made by my boos mama.

Self rewards

I've had a very productive morning. Woke up at 5:30am, drove two hours so my boo would be back for work, took care of my club duties, paid my bills, and returned a bunch of stuff. Needless to say I was very busy this morning so I am rewarding myself with a Santa Fe wrap with dressing on the side from Bagels and Blenders in Bakersfield. Super yummy and always a good wrap. Ate it with some fruit and my meal was complete. *sigh* I think it's time for a nap! ;) happy eating!

A leftover kind of night

Today is a lazy day. Luckily about a month ago or so I made braised beef and froze half of it for a moment like this. I'm so happy I froze it and am able to enjoy the braised beef without needing to work so hard to make it today. I sautéed some green beans with chopped up mushrooms, toasted bacon, and garlic to serve with the beef. My boos got it with rice and I ate mine salad style. (I know I've been obsessed with kale salad lately!) loooooove it! Yums and happy eating!

A yummy chicken sandwich for my post workout meal! Yums! Chicken sandwich: roasted chicken pieces mixed with lemon juice, Greek yogurt, green onions, cilantro, and sprouts sandwich between whole wheat bread. Yummmmmmms! Happy eating!

A lazy day equals a lazy lunch. It's my veggie day so I knew I needed to be creative on what I would eat today. So I decided a simple salad with be great. Super easy: poached eggs, kale, mixed greens, crumbled blue cheese, and tomatoes.

Getting ready for my veggie day… kind of

I had a yummy salad for dinner tonight. I told my boos that I would make him lomo saltado tonight since its been a whole since we've had it. So he got his served with rice and lots of roasted potatoes. I made a yummy kale and mixed greens salad then topped it with fresh mushrooms, roasted tomatoes, some crumbled blue cheese, and my lomo saltado marinated sirloin steak. Super super Noms!

Pork chops with black pepper sauce

Made some yummy pork chops tonight for dinner! Grilled the boneless pork chops for about 4 minutes on each side on medium high heat on the grill. Then sautéed some onions and mushrooms with black pepper sauce and chicken broth. I also made some 'fried rice' (no frying occurred). Sautéed the rice with eggs, my moms yummy Vietnamese pork, and green onions. I also sautéed some kale and brussels sprouts on the side. My boos was very very happy.

Chicken pot pie for my boo boo

Homemade chicken pot pie for my baby. Super yummy and easy to make! I got a rotisserie chicken cut it up and placed it in a pot with fresh corn, frozen peas, and some nonfat half and half. I let the filling heat up and thicken then poured it into a 8x8 pan. Topped the filling with puff pastry and brushed the pastry with a egg wash so it's nice and golden brown. The results were amazing and my boos was very happy. Yay! I served a small slice with mixed greens and tomatoes.

Stripsteak at Mandalay Bay in Las Vegas

The plan was to go to craftsteak for my brother and cousins birthday celebration in Las Vegas but they couldn't take our party until 10pm and their kitchen closes at 10:30pm. I hate being the last party at a restaurant. I always feel like I need to rush through my dinner so the waitstaff can go home. So we decided to try Michael Mina's Stripsteak instead. It was a great decision and everyone was very happy with their meal. The steak was very yummy and the birthday boy ordered the 'waygu rib-cap' which was extremely tender and yummmmy! Instead of bread our party was given fries fried in duck fat with three dipping sauces. The table ordered crab cakes, ahi tuna poppers, roasted bone marrow, waygu beef tartar to share and I split an aged rib eye with my sister. Even though it was a last minute change everything was super yummy and the birthday boy and girl enjoyed their dinner! Enjoy the photos!

Wow this weekend in Vegas was awesome. Got to spend time with my family, my brother had a great birthday weekend, some won some money… so lost… but we ate good. Man did we eat good! Here are some photos from Table 10 in The Palazzo. We ordered the candied bacon, sea scallops, sea bass, and oysters on a half shell. Super yummy and I would definitely come back here! Super yummy lunch with my fams today! We all shared a few things: the chicken mousse, escargot, lobster roll, steak frites, and a poached egg salad. Super yummy and I can't believe I haven't been here sooner!

It's my veggie day and I'm in Vegas.… even though I wanted to dive into a meaty steak I had to control myself. So… I got the Vegan Tasting Plate which consisted of: red and white quinoa, roasted beets, oyster mushrooms, roasted artichoke, and sautéed green beans and spinach. Not too shabby!
