My roommate told me the other day that we had excess bananas in the house that were going bad fast. She was thinking about making banana bread with it, but I automatically thought about Banana Cream Pie. Ooooo yummy yummy banana cream pie.. simple, refreshing, and oh so light. How could I resist....
So this morning I got up bright and early to make mini banana cream pies in cupcake liners. That way everyone gets to have their own mini pies for themselves and won't feel too bad if they don't want to share. Recipe and addtional pictures coming soon!

Banana Cream Pie: Nilla wafer crust, instant Jell-O vanilla pudding with mixed in banana puree, homemade whipped cream and topped with Trader Joe's Flur-de-sel Caramel Sauce (I added an additional sprinkle of kosher salt on top to balance out the sweetness) Happy Eating! ;)
